In homage to our honeybees, we present our Queen Bee Sparkling Chardonnay. The Queen Bee is made using the traditional method of in-bottle fermentation. After harvest, the base wine is dry fermented. The real magic begins with the secondary fermentation when a mixture of yeast and estate honey are added back into the wine. Our Queen Bee is then laid to rest as the CO2 forms, which creates the delicious bubbles you are about to experience. The vivid texture and aromatics in this wine are derived from this unique in-bottle fermentation.
